Savory Sweet Potato Patties:
(Dairy-Free; Gluten-Free)
1 large sweet potato, cooked
2 eggs
1 small onion, chopped
1/4 cup gluten-free flour
1/8 teaspoon parsley
1/8 teaspoon garlic powder
Salt and pepper to taste
Salsa
Slice sweet potato into large chunks and bake in oven at 350 degrees for 1 hour. Once cool, add into a blender with eggs, onion, and seasonings. Blend until smooth. Pour batter onto hot griddle and cook each side for 1-2 minutes. Top with salsa. (Makes 5 patties.)
