Timothy’s Savory Apple Pie:
(Dairy-Free)
Crust:
1/4 cup of coconut oil, cold
3/4 cup of flour
1/4 teaspoon salt
1/2 teaspoon apple cider vinegar
2-5 Tablespoons of ice water
Filling:
3 Apples, sliced
2 Pears, sliced
5-10 dried figs, sliced
2 Tablespoons of flour
1/3 cup of brown sugar
1/4 cup of granulated sugar
1/2 teaspoon vanilla
1/4 teaspoon lemon zest
Juice from 1/2 a lemon
1/8 teaspoon salt
1/8 teaspoon nutmeg
1/8 teaspoon sage
1/8 teaspoon ginger
1/8 teaspoon cloves
1/4 teaspoon chili powder
1/2 teaspoon cinnamon
Topping:
1/2 cup coconut oil, soft
1 cup of flour
1/4 cup of brown sugar
2 Tablespoons of granulated sugar
1/4 teaspoons of cinnamon
1/4 teaspoon of salt
1 cup of walnuts, chopped
Bake at 350 degrees for 60 minutes.
While pie is warm, sprinkle mini chocolate chip on top. Let pie sit for an hour or two before serving.
