ORIENTAL (Sweet and Sour) MEATBALLS:
Ingredients are given for 2 servings or (6 servings).
1 (2) lbs Ground Beef
1/2 cup (2 cups) Uncooked Rice
3/4 cup (1 3/4 c) Beef Broth
2 2/3 Tbl (1/2 c) Vinegar
2 2/3 Tbl (1/2 c) Sugar, Honey or Syrup
1 (3) Tbl Cornstarch
1 (2) tsp Soy Sauce (Coconut Aminos)
1 (3) Green Pepper
4 (8-10) Pineapple Slices
maraschino cherries, as many as desired.
Sprinkle ground beef with salt and pepper, and form into balls. Brown in frying pan. (You don't need to add fat to the skillet.)
While preparing the meat, cook the rice.
After meat is thoroughly brown and cooked, pour off all but about one tablespoon of fat.
While meat is cooking, combine the cornstarch with a small amout of the broth. Add the remaining broth, vinegar, sweetener, and soy sauce.
After removing meat from pan, pour the liquid mixture into the pan at medium low heat.
Cook and stir till clear and thickened.
It should be about the consistency of syrup.
If desired add more cornstarch and/or use the pineapple juice to thin it out.
Clean the green pepper and cut into pieces about one inch square.
Cut the pineapple slices into quarters.
Cut the cherried in half, if desired.
Add these all to the liquid mixture. Add the meat.
Cook only until fruits and green pepper are heated through.
The green pepper should still be a bit crisp when you serve it.
Put rice on a plate and pour the meat mixture over it.

This is a good dish to prepare for guests because It doesn't use a lot of pans and is quick to prepare. Also it is quite unique and you don't need to prepare other salad or vegetable.
