Coconut Maple Bacon Muffins

Coconut Maple Bacon Muffins:


4 slices uncooked bacon

reserved bacon drippings + coconut oil to make 1/2 cup

3 eggs

1/2 cup coconut milk

1/2 cup maple syrup

1/4 cup 1:1 gluten free flour

1/2 cup coconut flour

1/2 tsp baking soda

1/2 tsp salt




Whisk eggs, milk, syrup, bacon, and fat together.

Sift coconut flour, baking soda, and salt into a separate container.  Fold everything together.

Drop generous spoonfuls on a greased cookie sheet or muffin tins.

Bake at 400°F for 15 minutes.

Makes 12 morsels.
